Mahamri is a popular sweet and spiced bread in East Africa, specifically in Kenya and Tanzania. To make this delicious treat, follow these steps:

Ingredients:

  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup warm coconut milk
  • 1/2 cup warm water
  • 1 tablespoon instant yeast
  • Vegetable oil for frying

Instructions:

  1. In a large mixing bowl, combine the flour, sugar, cardamom, cinnamon, and salt. Mix well.
  2. In a separate bowl, dissolve the instant yeast in the warm coconut milk and water.
  3. Add the liquid mixture to the dry ingredients and knead until the dough is smooth and elastic. Add warm water if needed.
  4. Cover the dough with a clean cloth and let it rise for an hour until it doubles in size.
  5. Once the dough has risen, punch it down and knead it again.
  6. On a floured surface, roll out the dough into a thin sheet and cut it into small triangles or squares.
  7. Heat vegetable oil in a deep frying pan or pot over medium-high heat.
  8. Fry the mahamri in hot oil, flipping them until they turn golden brown on both sides.
  9. Remove the fried mahamri from the oil and place them on a paper towel to drain excess oil.
  10. Serve the mahamri while still warm, either as a snack or with a cup of chai tea.
